I love to cook and do things with my family, my husband, three kids and two little dogs. I have been cooking since I was a kid and love to share recipes and cooking methods. I am also pretty handy around the house and have experience fixing things because I have one of those Dad's that can do everything. I was taught to fix things the right way the first time and to work smart not hard.

I was making banana muffins today and wanted to share my recipe. I got this from my Grandmother and I think that it is the best one around.

Grandma Ruth's Banana Muffins
1/2 C All Vegetable Shortening  

1 C Sugar (can substitute brown sugar)

1 C Mashed very ripe banana's (about 2)

1 t real vanilla extract

1 Egg

1 1/2 C All Purpose Flour

1/2 t Ground Nutmeg

1 t Baking soda dissolved in 1 T water

pinch of salt

Preheat oven to 350 degrees. Beat shortening until light and fluffy . Add sugar and beat well. Add egg and banana's, mix well. Add baking soda dissolved in water. Add dash of salt to the flour and stir well. Add flour to banana mixture and whip flour in until just mixed. Grease muffin tins well with butter or margarine, spoon batter filling about 2/3 full. Bake for 20-30 minutes, until top springs back when lightly pressed.
